Steps

  1. Preheat a non-stick skillet over medium heat and add the olive oil.
  2. Add the diced red bell pepper to the skillet and sauté for 2-3 minutes until slightly softened.
  3. Add the chopped spinach and halved cherry tomatoes to the skillet, cooking for another 2-3 minutes until the spinach wilts.
  4. In a bowl, whisk the egg whites until slightly frothy. Season with salt and black pepper.
  5. Pour the egg whites over the sautéed vegetables in the skillet, tilting the pan to ensure even coverage.
  6. Sprinkle the grated Parmesan cheese and chopped basil on top.
