Ingredients

  • Fregola pasta - 150 grams
  • Fresh clams - 300 grams
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Extra virgin olive oil - 2 tablespoons
  • White wine - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Water - 500 ml

Steps

  1. Rinse the clams under cold water to remove any grit and sand.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.
  3. Add the clams to the pot along with the white wine. Cover and cook for about 5 minutes, or until the clams open. Discard any clams that do not open.
  4. Remove the clams with a slotted spoon and set aside, reserving the cooking liquid.
  5. In the same pot, add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
  6. Add fregola pasta to the pot and pour in the reserved cooking liquid along with 500 ml of water. Bring to a boil, then reduce to a simmer.
  7. Cook the fregola for about 10-12 minutes, stirring occasionally, until al dente.
  8. Once the fregola is cooked, return the clams to the pot, and add the remaining olive oil, chopped parsley, salt, and pepper. Stir to combine and heat through for 2 minutes.
  9. Serve hot, garnished with additional parsley if desired.
