- Fregola pasta - 150 grams
- Fresh clams - 300 grams
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Extra virgin olive oil - 2 tablespoons
- White wine - 100 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Water - 500 ml
Steps
- Rinse the clams under cold water to remove any grit and sand.
- In a large pot, heat 1 tablespoon of olive oil over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.
- Add the clams to the pot along with the white wine. Cover and cook for about 5 minutes, or until the clams open. Discard any clams that do not open.
- Remove the clams with a slotted spoon and set aside, reserving the cooking liquid.
- In the same pot, add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Add fregola pasta to the pot and pour in the reserved cooking liquid along with 500 ml of water. Bring to a boil, then reduce to a simmer.
- Cook the fregola for about 10-12 minutes, stirring occasionally, until al dente.
- Once the fregola is cooked, return the clams to the pot, and add the remaining olive oil, chopped parsley, salt, and pepper. Stir to combine and heat through for 2 minutes.
- Serve hot, garnished with additional parsley if desired.
