Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 160 ml
  • Active dry yeast - 7 grams
  • Sea salt - 5 grams
  • Olive oil - 30 ml (plus extra for drizzling)
  • Fresh rosemary - 2 sprigs
  • Coarse sea salt - for sprinkling

Steps

  1. In a mixing bowl, combine warm water and active dry yeast, and let it sit for about 5 minutes until frothy.
  2. In a large bowl, mix all-purpose flour and sea salt.
  3. Add the yeast mixture and olive oil to the flour, and mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat your oven to 220°C (425°F).
  7. Once the dough has risen, punch it down and transfer it to a greased baking sheet.
  8. Using your fingers, stretch and press the dough to fit the baking sheet, creating dimples across the surface.
  9. Drizzle a bit of olive oil on top, sprinkle with coarse sea salt, and scatter fresh rosemary leaves over the dough.
  10. Let the dough rest for another 20 minutes while the oven heats.
  11. Bake in the preheated oven for 20-25 minutes or until golden brown.
  12. Remove from the oven and let cool slightly before slicing and serving.
