- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 30 ml
- Salt - 5 grams
- Black pepper - to taste
- Eggs - 2 large
- Cherry tomatoes - 100 grams, halved
- Fresh rosemary - 2 sprigs, chopped
- Parmesan cheese - 30 grams, grated
Steps
- In a mixing bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until it becomes frothy.
- In a large bowl, mix the all-purpose flour and salt. Create a well in the center, then add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and spread it out on a baking sheet lined with parchment paper, forming a rectangular shape.
- Make dimples in the dough with your fingers, then sprinkle with chopped rosemary, black pepper, and halved cherry tomatoes.
- Crack an egg into the center of each dimple, then sprinkle grated Parmesan cheese over the top.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are set and the focaccia is golden brown.
- Remove from the oven, let cool slightly, slice, and serve warm.
