  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Olive oil - 30 ml
  • Black olives (pitted and sliced) - 50 grams
  • Fresh rosemary - 1 tablespoon, chopped
  • Salt - 5 grams
  • Honey - 1 teaspoon

Steps

  1. In a small bowl, combine warm water, honey, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and spread it out onto a parchment-lined baking sheet, making dimples with your fingers.
  7. Evenly distribute the sliced olives and chopped rosemary over the top of the dough, pressing them in gently.
  8. Drizzle a little olive oil on top and sprinkle with a pinch of salt.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  10. Remove from the oven and let cool slightly before slicing and serving.
