- Warm water - 150 milliliters
- Active dry yeast - 5 grams
- Olive oil - 30 milliliters
- Salt - 5 grams
- Fresh rosemary - 1 tablespoon, chopped
- Ricotta cheese - 100 grams
- Mozzarella cheese - 100 grams, shredded
- Black pepper - to taste
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine all-purpose flour, salt, and chopped rosemary. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for about 30 minutes, or until doubled in size.
- Preheat your oven to 220°C (428°F).
- Once risen, punch down the dough and spread it in a greased baking dish or on a parchment-lined baking sheet, about 1.5 cm thick.
- Using your fingers, create dimples all over the surface of the dough.
- Spread ricotta cheese evenly over the dough and sprinkle shredded mozzarella on top. Season with black pepper.
- Drizzle a little olive oil over the top and sprinkle with additional rosemary, if desired.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and the cheese is bubbly.
- Remove from the oven, let it cool slightly, and slice into pieces to serve.
