Ingredients

  • Warm water - 150 milliliters
  • Active dry yeast - 5 grams
  • Olive oil - 30 milliliters
  • Salt - 5 grams
  • Fresh rosemary - 1 tablespoon, chopped
  • Ricotta cheese - 100 grams
  • Mozzarella cheese - 100 grams, shredded
  • Black pepper - to taste

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine all-purpose flour, salt, and chopped rosemary. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  5. Preheat your oven to 220°C (428°F).
  6. Once risen, punch down the dough and spread it in a greased baking dish or on a parchment-lined baking sheet, about 1.5 cm thick.
  7. Using your fingers, create dimples all over the surface of the dough.
  8. Spread ricotta cheese evenly over the dough and sprinkle shredded mozzarella on top. Season with black pepper.
  9. Drizzle a little olive oil over the top and sprinkle with additional rosemary, if desired.
  10. Bake in the preheated oven for 15-20 minutes, or until golden brown and the cheese is bubbly.
