Ingredients

  • All-purpose flour - 300 grams
  • Water - 200 ml
  • Active dry yeast - 7 grams
  • Olive oil - 30 ml
  • Sea salt - 10 grams
  • Cherry tomatoes - 100 grams
  • Black olives - 50 grams
  • Fresh rosemary - 5 grams
  • Coarse sea salt - for sprinkling

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and 10 grams of sea salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix the ingredients until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and transfer it to a baking tray lined with parchment paper.
  7. Gently stretch the dough to fit the tray, then use your fingers to create dimples all over the surface.
  8. Halve the cherry tomatoes and scatter them over the dough along with the pitted black olives and fresh rosemary.
  9. Drizzle with a bit more olive oil and sprinkle coarse sea salt on top.
  10. Let the focaccia rest for another 20 minutes before baking.
  11. Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.
  12. Remove from the oven and allow to cool slightly before slicing and serving.
