- All-purpose flour - 300 grams
- Water - 200 ml
- Active dry yeast - 7 grams
- Olive oil - 30 ml
- Sea salt - 10 grams
- Cherry tomatoes - 100 grams
- Black olives - 50 grams
- Fresh rosemary - 5 grams
- Coarse sea salt - for sprinkling
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and 10 grams of sea salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix the ingredients until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and transfer it to a baking tray lined with parchment paper.
- Gently stretch the dough to fit the tray, then use your fingers to create dimples all over the surface.
- Halve the cherry tomatoes and scatter them over the dough along with the pitted black olives and fresh rosemary.
- Drizzle with a bit more olive oil and sprinkle coarse sea salt on top.
- Let the focaccia rest for another 20 minutes before baking.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.
- Remove from the oven and allow to cool slightly before slicing and serving.
