- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 30 ml
- Sea salt - 5 grams
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 2 sprigs, chopped
- Fresh oregano - 2 sprigs, chopped
- Coarse sea salt - for sprinkling
- Black pepper - to taste
Steps
- In a small bowl, combine warm water and active dry yeast, let it sit for 5-10 minutes until it becomes frothy.
- In a large mixing bowl, combine all-purpose flour and sea salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat your BBQ grill to medium heat. Once the dough has risen, punch it down and transfer it to a baking sheet lined with parchment paper.
- Press the dough into a rectangle or circle about 1-2 cm thick. Use your fingers to dimple the surface.
- Sprinkle chopped herbs, coarse sea salt, and black pepper over the top, drizzling a little more olive oil if desired.
- Place the focaccia directly on the grill and close the lid. Cook for about 10-15 minutes, or until the bottom is golden and the top is lightly browned.
- Remove from the grill and let it cool slightly before slicing. Serve warm.
