Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 milliliters
  • Olive oil - 30 milliliters (plus extra for brushing)
  • Active dry yeast - 7 grams
  • Salt - 5 grams
  • Fresh rosemary - 2 sprigs, chopped
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 1 medium, sliced
  • Black olives - 50 grams, pitted and sliced
  • Balsamic vinegar - 10 milliliters

Steps

  1. In a bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, mix together the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 10 minutes until it becomes smooth and elastic. Add chopped rosemary during the kneading process.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes, or until doubled in size.
  5. Once risen, preheat your grill to medium-high heat.
  6. Gently punch down the dough and stretch it out on a floured surface to about 1.5 cm thick.
  7. Place the dough on a piece of parchment paper and transfer it to the grill. Cook for about 5-7 minutes until the bottom is golden brown.
  8. Flip the focaccia over, top with cherry tomatoes, bell pepper slices, and black olives, then brush with olive oil and drizzle balsamic vinegar over the top.
  9. Close the grill lid and cook for another 5-7 minutes, until the toppings are cooked and the bread is golden and crispy.
  10. Remove from the grill, let it cool for a few minutes, slice, and serve warm.
