- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon zest - 1 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Trim the fennel bulbs by cutting off the tops and slicing them in half lengthwise. Remove the core and slice each half into 1 cm thick wedges.
- In a large mixing bowl, combine the fennel wedges, olive oil, minced garlic, thyme, salt, pepper, and lemon zest. Toss until the fennel is well coated.
- Transfer the fennel mixture to a baking dish and spread it out evenly.
- Sprinkle the grated Parmesan cheese over the fennel.
- Bake in the preheated oven for 25-30 minutes, or until the fennel is tender and golden brown, stirring halfway through cooking.
- Remove from the oven and let it cool for a few minutes before serving.
