- Parmesan cheese - 30 grams, grated

Steps
- Cook the fettuccine according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a bit of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced mushrooms to the skillet, stirring frequently. Cook for about 5-7 minutes until they are tender and browned.
- Pour in the vegetable broth and bring to a simmer. Allow it to cook for another 3-4 minutes to reduce slightly.
- Stir in the heavy cream and Parmesan cheese, mixing well until the cheese has melted and the sauce is creamy. Season with salt and black pepper to taste.
- Add the cooked fettuccine to the skillet, tossing to coat the pasta evenly with the sauce. If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
- Remove from heat and stir in the chopped parsley. Serve immediately, garnished with additional Parmesan if desired.
