Ingredients

  • Fettuccine - 160 grams
  • Asparagus - 200 grams, trimmed and cut into 2-inch pieces
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 100 ml
  • Heavy cream - 100 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Bring a large pot of salted water to a boil for the fettuccine.
  2. While the water is heating, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté until fragrant, about 1 minute.
  4. Add the asparagus pieces to the skillet and sauté for about 5-7 minutes until tender but still crisp.
  5. Once the water is boiling, cook the fettuccine according to package instructions until al dente, about 8-10 minutes.
  6. Reserve 1/2 cup of the pasta cooking water, then drain the fettuccine.
  7. Add the cooked fettuccine to the skillet with the asparagus, then pour in the vegetable broth and heavy cream.
  8. Toss everything together over medium heat, adding reserved pasta water a little at a time until the desired sauce consistency is reached.
  9. Stir in the grated Parmesan cheese and season with salt and black pepper to taste.
  10. Serve immediately, garnished with fresh parsley.
