- Vegetable broth - 100 ml
- Heavy cream - 100 ml
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Bring a large pot of salted water to a boil for the fettuccine.
- While the water is heating, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté until fragrant, about 1 minute.
- Add the asparagus pieces to the skillet and sauté for about 5-7 minutes until tender but still crisp.
- Once the water is boiling, cook the fettuccine according to package instructions until al dente, about 8-10 minutes.
- Reserve 1/2 cup of the pasta cooking water, then drain the fettuccine.
- Add the cooked fettuccine to the skillet with the asparagus, then pour in the vegetable broth and heavy cream.
- Toss everything together over medium heat, adding reserved pasta water a little at a time until the desired sauce consistency is reached.
- Stir in the grated Parmesan cheese and season with salt and black pepper to taste.
- Serve immediately, garnished with fresh parsley.
