Ingredients

  • Fettuccine - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 milliliters
  • Parmesan cheese - 50 grams, grated
  • Truffle oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté until fragrant, about 1 minute.
  3. Add the heavy cream to the skillet and bring to a gentle simmer. Cook for 2-3 minutes until slightly thickened.
  4. Stir in the grated Parmesan cheese, truffle oil, and season with salt and black pepper. Mix until the cheese is melted and the sauce is creamy.
  5. Once the fettuccine is cooked, reserve a cup of pasta water, then drain the pasta and add it directly to the sauce. Toss to coat the pasta in the sauce, adding reserved pasta water as needed for a smoother consistency.
  6. Remove from heat and garnish with fresh parsley before serving.
