Ingredients

  • Fettuccine - 200 grams
  • Fresh basil leaves - 50 grams
  • Pine nuts - 30 grams
  • Garlic - 1 clove
  • Parmesan cheese, grated - 30 grams
  • Olive oil - 60 ml
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, prepare the pesto by combining the basil leaves, pine nuts, garlic, and Parmesan cheese in a food processor.
  3. Pulse the mixture until finely chopped, then gradually add the olive oil while blending until smooth.
  4. Add lemon juice, salt, and black pepper to taste, blending again to combine.
  5. Once the fettuccine is cooked, reserve about 1/2 cup of pasta cooking water, then drain the pasta.
  6. In a large bowl, combine the hot fettuccine with the pesto sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  7. Serve immediately, garnished with extra Parmesan cheese and a sprinkle of black pepper, if desired.
