- Fettuccine - 200g
- Extra virgin olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 60ml (from about 1 large lemon)
- Lemon zest - 1 teaspoon
- Nutritional yeast - 3 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Once the pasta is cooked, reserve about 100ml of the pasta cooking water, then drain the fettuccine.
- Add the drained fettuccine to the skillet with the garlic and olive oil.
- Pour in the lemon juice and reserved pasta water, then add the lemon zest and nutritional yeast, tossing everything together to combine.
- Season with salt and black pepper to taste, and continue to toss until the pasta is evenly coated and heated through.
- Serve immediately, garnished with chopped fresh parsley.
