Ingredients

  • Fettuccine - 200g
  • Extra virgin olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 60ml (from about 1 large lemon)
  • Lemon zest - 1 teaspoon
  • Nutritional yeast - 3 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  4. Once the pasta is cooked, reserve about 100ml of the pasta cooking water, then drain the fettuccine.
  5. Add the drained fettuccine to the skillet with the garlic and olive oil.
  6. Pour in the lemon juice and reserved pasta water, then add the lemon zest and nutritional yeast, tossing everything together to combine.
  7. Season with salt and black pepper to taste, and continue to toss until the pasta is evenly coated and heated through.
  8. Serve immediately, garnished with chopped fresh parsley.
