  • Fettuccine - 160 grams

  • Olive oil - 2 tablespoons
  • Vegetable broth - 150 ml
  • Heavy cream (or a plant-based alternative) - 50 ml
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the fettuccine in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they are tender and have released their moisture. Season with salt and black pepper.

  7. Remove from heat and stir in the grated Parmesan cheese and chopped parsley. Adjust seasoning with salt and pepper as needed.
