- Vegetable broth - 150 ml
- Heavy cream (or a plant-based alternative) - 50 ml
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the fettuccine in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they are tender and have released their moisture. Season with salt and black pepper.

- Add the cooked fettuccine to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, add a splash of the reserved pasta water.
- Remove from heat and stir in the grated Parmesan cheese and chopped parsley. Adjust seasoning with salt and pepper as needed.
