- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 100 grams, halved
- Zucchini - 1 medium, sliced
- Fresh parsley - for garnish
Steps
- Rinse the lamb liver under cold water and pat dry with paper towels.
- In a bowl, mix together olive oil, chopped rosemary, minced garlic, lemon juice, salt, and black pepper to create a marinade.
- Add the lamb liver to the marinade, ensuring it is well coated. Cover and let it marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- While the grill is heating, prepare the vegetables. Toss the halved cherry tomatoes and sliced zucchini in a little olive oil, salt, and pepper.
- Place the marinated lamb liver on the grill and cook for about 3-4 minutes per side, or until browned and slightly firm to the touch.
- At the same time, grill the cherry tomatoes and zucchini for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.
- Remove the liver and vegetables from the grill and let them rest for a few minutes.
- Slice the grilled liver and serve it on a plate alongside the grilled vegetables, garnished with fresh parsley.
