Ingredients

  • Mixed greens (arugula, spinach, and romaine) - 100g
  • Cherry tomatoes - 100g
  • Cucumber - 1 medium, diced (about 150g)
  • Radishes - 4, thinly sliced
  • Bell pepper (red or yellow) - 1, diced (about 150g)
  • Red onion - 1 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Pita bread - 1 large, cut into triangles
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Spread the pita triangles on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt. Bake for about 5-7 minutes or until golden and crispy.
  3. While the pita is baking, prepare the salad by mixing the mixed greens, cherry tomatoes, cucumber, radishes, bell pepper, and red onion in a large bowl.
  4. In a small bowl, whisk together the remaining olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
  5. Once the pita is done, remove from the oven and let it cool slightly before adding it to the salad bowl.
  6. Pour the dressing over the salad, toss gently to combine, and then sprinkle with fresh parsley and mint.
