- Cherry tomatoes - 100g
- Cucumber - 1 medium, diced (about 150g)
- Radishes - 4, thinly sliced
- Bell pepper (red or yellow) - 1, diced (about 150g)
- Red onion - 1 small, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Pita bread - 1 large, cut into triangles
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Sumac - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Spread the pita triangles on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt. Bake for about 5-7 minutes or until golden and crispy.
- While the pita is baking, prepare the salad by mixing the mixed greens, cherry tomatoes, cucumber, radishes, bell pepper, and red onion in a large bowl.
- In a small bowl, whisk together the remaining olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
- Once the pita is done, remove from the oven and let it cool slightly before adding it to the salad bowl.
- Pour the dressing over the salad, toss gently to combine, and then sprinkle with fresh parsley and mint.
