Ingredients

  • Green beans - 250 grams
  • Garlic - 2 cloves, thinly sliced
  • Extra virgin olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 2 tablespoons, grated (optional)

Steps

  1. Rinse the green beans under cold water and trim the ends.
  2. In a large pot, bring salted water to a boil and blanch the green beans for 2-3 minutes until bright green and tender-crisp.
  3. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process.
  4. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté for 1-2 minutes until fragrant and lightly golden, being careful not to burn it.
  5. Add the blanched green beans to the skillet, tossing to coat them in the garlic oil. Sauté for an additional 3-4 minutes.
  6. Season with salt, black pepper, and lemon juice. Toss to combine and cook for another minute.
  7. Transfer to a serving dish and sprinkle with grated Parmesan cheese if desired. Serve warm.
