  • Cannellini beans - 200 grams (cooked, drained)
  • Chicory (or dandelion greens) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (sliced)
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a pot of salted water to a boil and blanch the chicory for 3-4 minutes until tender. Drain and set aside.
  2. In a skillet, heat the olive oil over medium heat and add the sliced garlic. Sauté until fragrant and golden, about 1-2 minutes.
  3. Add the blanched chicory to the skillet along with red pepper flakes, salt, and black pepper. Cook for an additional 5 minutes to incorporate the flavors.
  4. Stir in the cooked cannellini beans and heat through for another 3-4 minutes.
  5. Remove from heat and drizzle with lemon juice before serving.
