Ingredients

  • Canned cannellini beans - 400 grams, drained and rinsed
  • Paleo-friendly Italian sausage - 200 grams, casings removed
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Olive oil - 2 tablespoons
  • Chicken broth - 250 milliliters
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Crushed red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Add the Italian sausage to the skillet, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes.
  4. Stir in the drained cannellini beans, chicken broth, chopped rosemary, salt, and black pepper. Bring to a simmer.
  5. Let the mixture cook for about 10-15 minutes, allowing the flavors to meld together. If using, stir in the crushed red pepper flakes for added spice.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with additional rosemary if desired.
