  • Dried cannellini beans - 150 grams
  • Pork belly, diced - 150 grams
  • Garlic, minced - 2 cloves
  • Onion, chopped - 1 medium
  • Carrot, diced - 1 medium
  • Celery, diced - 1 stalk
  • Fresh rosemary - 1 sprig
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 500 ml

Steps

  1. Soak the dried cannellini beans in water overnight, then drain and rinse them before cooking.
  2. In a large pot, heat the olive oil over medium heat and add the diced pork belly. Cook until browned and crispy, about 5-7 minutes.
  3. Add the chopped onion, garlic, carrot, and celery to the pot. Sauté for about 5-6 minutes until the vegetables are softened.
  4. Stir in the soaked beans, vegetable broth, rosemary, and bay leaf. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the beans are tender. Stir occasionally and add more broth or water if necessary.
  6. Once the beans are cooked, season with salt and black pepper to taste. Remove the bay leaf and rosemary sprig before serving.
