- Carrot, diced - 1 medium
- Celery, diced - 1 stalk
- Fresh rosemary - 1 sprig
- Bay leaf - 1
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 500 ml
Steps
- Soak the dried cannellini beans in water overnight, then drain and rinse them before cooking.
- In a large pot, heat the olive oil over medium heat and add the diced pork belly. Cook until browned and crispy, about 5-7 minutes.
- Add the chopped onion, garlic, carrot, and celery to the pot. Sauté for about 5-6 minutes until the vegetables are softened.
- Stir in the soaked beans, vegetable broth, rosemary, and bay leaf. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the beans are tender. Stir occasionally and add more broth or water if necessary.
- Once the beans are cooked, season with salt and black pepper to taste. Remove the bay leaf and rosemary sprig before serving.
