  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Fresh rosemary - 1 tablespoon (chopped)
  • Fresh thyme - 1 tablespoon (chopped)
  • Red chili flakes - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 200 grams (halved)

Steps

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine the cannellini beans, olive oil, minced garlic, chopped rosemary, chopped thyme, red chili flakes, lemon juice, salt, and black pepper. Toss gently to coat the beans well.
  3. Let the mixture marinate for about 10 minutes to allow the flavors to meld.
  4. While the beans are marinating, prepare the cherry tomatoes by tossing them with a drizzle of olive oil, salt, and pepper.
  5. Place a grill basket or a piece of aluminum foil on the grill, and add the marinated beans and halved cherry tomatoes.
  6. Grill for about 10-15 minutes, stirring occasionally, until the beans are heated through and slightly charred, and the tomatoes are blistered.
