Ingredients

  • 1 medium eggplant - sliced into 1 cm rounds
  • 1/2 cup all-purpose flour
  • 1 large egg - beaten
  • 1 cup breadcrumbs - preferably Italian seasoned
  • 1/2 cup marinara sauce
  • 100 grams mozzarella cheese - sliced
  • 2 whole wheat burger buns
  • 1 tablespoon olive oil
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for about 15 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  4. Set up a breading station: Place flour in one plate, the beaten egg in another, and breadcrumbs in a third plate.
  5. Dredge each eggplant slice in flour, dip it into the egg, and then coat it with breadcrumbs.
  6. Heat olive oil in a skillet over medium heat. Fry the breaded eggplant slices for about 3-4 minutes on each side until golden brown.
  7. Once fried, place the eggplant slices on a baking sheet. Top each slice with a spoonful of marinara sauce and a slice of mozzarella cheese.
  8. Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
  9. Toast the whole wheat burger buns in the oven for the last 2-3 minutes of baking.
  10. Assemble the burgers: Place a cheesy eggplant slice on the bottom half of each bun, add fresh basil leaves, and cover with the top half of the bun. Serve immediately.
