- 1 medium eggplant - sliced into 1 cm rounds
- 1/2 cup all-purpose flour
- 1 large egg - beaten
- 1 cup breadcrumbs - preferably Italian seasoned
- 1/2 cup marinara sauce
- 100 grams mozzarella cheese - sliced
- 2 whole wheat burger buns
- 1 tablespoon olive oil
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for about 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
- Set up a breading station: Place flour in one plate, the beaten egg in another, and breadcrumbs in a third plate.
- Dredge each eggplant slice in flour, dip it into the egg, and then coat it with breadcrumbs.
- Heat olive oil in a skillet over medium heat. Fry the breaded eggplant slices for about 3-4 minutes on each side until golden brown.
- Once fried, place the eggplant slices on a baking sheet. Top each slice with a spoonful of marinara sauce and a slice of mozzarella cheese.
- Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
- Toast the whole wheat burger buns in the oven for the last 2-3 minutes of baking.
- Assemble the burgers: Place a cheesy eggplant slice on the bottom half of each bun, add fresh basil leaves, and cover with the top half of the bun. Serve immediately.
