Ingredients

  • Eggplant - 1 medium (about 300g)
  • Salt - 1 teaspoon
  • All-purpose flour - 1/3 cup (40g)
  • Eggs - 2 large, beaten
  • Breadcrumbs - 1 cup (100g)
  • Olive oil - 1/4 cup (60ml)
  • Marinara sauce - 1 cup (240ml)
  • Mozzarella cheese, shredded - 1 cup (100g)
  • Parmesan cheese, grated - 1/4 cup (25g)
  • Fresh basil leaves - 1/4 cup (10g), chopped
  • Black pepper - to taste

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the eggplant into 1/2-inch thick rounds and sprinkle with salt. Let it sit for about 30 minutes to draw out moisture, then rinse and pat dry.
  3. Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with black pepper.
  4. Dredge each eggplant slice in flour, dip in beaten eggs, and coat with breadcrumbs.
  5. In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
  6. In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer half of the fried eggplant slices, followed by half of the marinara sauce, half of the mozzarella, and half of the Parmesan cheese. Repeat with the remaining ingredients.
  7. Sprinkle chopped basil on top and cover the dish with aluminum foil.
  8. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
