Ingredients

  • Zucchini - 1 medium
  • Olive oil - 2 tablespoons
  • Chicken livers - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Red wine - 50 ml
  • Capers - 1 tablespoon, rinsed and chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Slice the zucchini lengthwise into 1 cm thick slices and brush both sides with olive oil. Place on a baking tray and roast for 15-20 minutes until tender and slightly golden.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the chicken livers to the skillet and cook for about 5-7 minutes, stirring occasionally until they are browned on the outside but still slightly pink on the inside.
  5. Pour in the red wine and let it simmer for 3-4 minutes until reduced by half. Stir in the capers, parsley, salt, and pepper to taste.
  6. Remove the skillet from heat and let the mixture cool slightly before transferring it to a food processor. Blend until smooth to create a pâté.
  7. Spread the chicken liver pâté generously over the roasted zucchini slices and serve immediately.
