Ingredients
- Zucchini - 1 medium
- Olive oil - 2 tablespoons
- Chicken livers - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Red wine - 50 ml
- Capers - 1 tablespoon, rinsed and chopped
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (390°F).
- Slice the zucchini lengthwise into 1 cm thick slices and brush both sides with olive oil. Place on a baking tray and roast for 15-20 minutes until tender and slightly golden.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the chicken livers to the skillet and cook for about 5-7 minutes, stirring occasionally until they are browned on the outside but still slightly pink on the inside.
- Pour in the red wine and let it simmer for 3-4 minutes until reduced by half. Stir in the capers, parsley, salt, and pepper to taste.
- Remove the skillet from heat and let the mixture cool slightly before transferring it to a food processor. Blend until smooth to create a pâté.
- Spread the chicken liver pâté generously over the roasted zucchini slices and serve immediately.
