Ingredients

  • Low-carb bread - 4 slices
  • Ricotta cheese - 200 grams
  • Fresh basil - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Balsamic vinegar - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the low-carb bread slices on a baking sheet and drizzle with 1 tablespoon of olive oil.
  3. Toast the bread in the oven for about 5-7 minutes, or until golden and crispy.
  4. While the bread is toasting, in a bowl, combine the ricotta cheese, chopped basil, salt, and black pepper.
  5. Once the bread is toasted, spread a generous layer of the ricotta mixture on each slice.
  6. Top each crostini with halved cherry tomatoes.
  7. Drizzle the remaining tablespoon of olive oil over the crostini and, if desired, a splash of balsamic vinegar.
  8. Serve immediately while the crostini are warm.
