- Chicken breast - 200 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1 medium
- Lemon juice - 1 tablespoon
- Almond flour - 4 tablespoons
- Egg - 1 large
- Parmesan cheese - 2 tablespoons, grated
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breast and coat well.
- Place the chicken on a baking sheet and bake for 20 minutes or until cooked through. Let it cool slightly, then chop into small pieces.
- In a separate bowl, mash the avocado and mix in lemon juice, salt, and half of the chopped parsley.
- In another bowl, combine almond flour, egg, and Parmesan cheese to form a dough.
- Shape the dough into 4 small rounds and flatten them slightly. Place on a lined baking sheet.
- Bake the almond flour rounds in the oven for 10 minutes until golden brown.
- Top each crostini with the avocado spread and the chopped chicken pieces.
- Garnish with the remaining parsley and serve warm.
