Ingredients

  • Chicken breast - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1 medium
  • Lemon juice - 1 tablespoon
  • Almond flour - 4 tablespoons
  • Egg - 1 large
  • Parmesan cheese - 2 tablespoons, grated
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breast and coat well.
  3. Place the chicken on a baking sheet and bake for 20 minutes or until cooked through. Let it cool slightly, then chop into small pieces.
  4. In a separate bowl, mash the avocado and mix in lemon juice, salt, and half of the chopped parsley.
  5. In another bowl, combine almond flour, egg, and Parmesan cheese to form a dough.
  6. Shape the dough into 4 small rounds and flatten them slightly. Place on a lined baking sheet.
  7. Bake the almond flour rounds in the oven for 10 minutes until golden brown.
  8. Top each crostini with the avocado spread and the chopped chicken pieces.
  9. Garnish with the remaining parsley and serve warm.
