Ingredients

  • Polenta - 150 grams
  • Water - 500 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Fresh mozzarella cheese - 100 grams
  • Cherry tomatoes - 100 grams
  • Fresh basil leaves - 10 grams
  • Balsamic vinegar - 1 tablespoon
  • Black pepper - to taste

Steps

  1. Bring 500 milliliters of water to a boil in a medium saucepan. Add 1 teaspoon of salt.
  2. Gradually whisk in 150 grams of polenta, stirring continuously to avoid lumps.
  3. Reduce the heat to low and cook for about 15 minutes until the polenta thickens, stirring occasionally.
  4. Once thickened, pour the polenta into a greased baking dish and spread it evenly. Allow it to cool and set for about 10 minutes.
  5. Preheat your oven to 200°C (400°F).
  6. Once the polenta has set, cut it into slices or squares and place them on a baking sheet.
  7. Drizzle the polenta slices with 2 tablespoons of olive oil and bake for 10-15 minutes until golden and crispy.
  8. While the polenta is baking, slice 100 grams of fresh mozzarella and halve 100 grams of cherry tomatoes.
  9. Remove the polenta from the oven and top each slice with a piece of mozzarella, a cherry tomato half, and a basil leaf.
  10. Drizzle with balsamic vinegar and season with black pepper before serving.
