Ingredients

  • Chicken livers - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Balsamic vinegar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain baguette - 1, sliced
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and chicken livers to the skillet. Cook for about 5-7 minutes until the livers are browned on the outside but slightly pink inside.
  3. Stir in the chopped thyme, balsamic vinegar, salt, and black pepper. Cook for an additional 2 minutes.
  4. Remove from heat and let cool slightly. Transfer the mixture to a food processor and blend until smooth and creamy. Adjust seasoning if necessary.
  5. Preheat the oven to 180°C (350°F). Place the sliced baguette on a baking sheet and brush with the remaining olive oil. Bake for about 8-10 minutes until golden and crispy.
  6. Spread the chicken liver pâté generously over the toasted baguette slices. Garnish with chopped parsley before serving.
