Ingredients

  • Baguette - 1 small (about 200g)
  • Ripe tomatoes - 2 medium (about 250g)
  • Fresh basil leaves - 10g
  • Extra virgin olive oil - 2 tablespoons (30ml)
  • Garlic - 1 clove
  • Sea salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the baguette into 1 cm thick slices and arrange them on a baking sheet.
  3. Toast the bread in the preheated oven for about 5-7 minutes, or until golden and crispy.
  4. While the bread is toasting, chop the ripe tomatoes into small cubes and place them in a bowl.
  5. Finely chop the fresh basil leaves and add them to the bowl with tomatoes.
  6. Minced the garlic clove and add it to the tomato mixture.
  7. Drizzle 1 tablespoon of olive oil over the tomato mixture and season with sea salt and black pepper to taste. Mix gently.
  8. Once the crostini are ready, remove them from the oven and let them cool slightly.
  9. Top each slice of toasted bread with the tomato mixture and drizzle with the remaining olive oil before serving.
