Ingredients

  • Baguette - 1 (about 250g)
  • Cooked lentils - 200g
  • Cherry tomatoes - 100g, halved
  • Red onion - 50g, finely chopped
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the baguette into 1.5 cm thick slices and arrange them on a baking sheet.
  3. Brush both sides of the baguette slices with olive oil and sprinkle with a pinch of salt.
  4. Toast the bread in the oven for about 10 minutes, flipping halfway through, until golden and crispy.
  5. While the bread is toasting, heat 1 tablespoon of olive oil in a pan over medium heat.
  6. Add the minced garlic and chopped red onion to the pan, cooking until the onion is translucent, about 3-4 minutes.
  7. Stir in the cooked lentils and halved cherry tomatoes, cooking for an additional 5 minutes until heated through.
  8. Add balsamic vinegar, salt, pepper, and chopped parsley, mixing well to combine.
  9. Once the crostini are toasted, remove them from the oven and top each slice with the lentil mixture.
