- Cooked lentils - 200g
- Cherry tomatoes - 100g, halved
- Red onion - 50g, finely chopped
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Slice the baguette into 1.5 cm thick slices and arrange them on a baking sheet.
- Brush both sides of the baguette slices with olive oil and sprinkle with a pinch of salt.
- Toast the bread in the oven for about 10 minutes, flipping halfway through, until golden and crispy.
- While the bread is toasting, heat 1 tablespoon of olive oil in a pan over medium heat.
- Add the minced garlic and chopped red onion to the pan, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the cooked lentils and halved cherry tomatoes, cooking for an additional 5 minutes until heated through.
- Add balsamic vinegar, salt, pepper, and chopped parsley, mixing well to combine.
- Once the crostini are toasted, remove them from the oven and top each slice with the lentil mixture.
