  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30g, grated (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the gluten-free baguette into 1 cm thick slices.
  3. Arrange the slices on a baking sheet and brush both sides lightly with 1 tablespoon of olive oil.
  4. Bake in the preheated oven for about 10 minutes, or until golden and crispy, flipping halfway through.
  5. In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat.
  6. Add the minced garlic and sauté for 1 minute until fragrant.
  7. Add the sliced mushrooms to the skillet, season with salt and black pepper, and cook for about 8-10 minutes, until the mushrooms are tender and browned.
  8. Stir in the chopped parsley and cook for an additional minute.
  9. Remove the crostini from the oven and top each slice with the mushroom mixture.
  10. Sprinkle with grated Parmesan cheese if using, and serve warm.
