- Baguette - 1 small (about 200g)
- Chicken livers - 250g
- Butter - 50g
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- White wine - 50ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for drizzling
Steps
- Preheat the oven to 200°C (390°F).
- Slice the baguette into 1 cm thick slices and arrange them on a baking sheet.
- Drizzle the bread slices with olive oil and toast in the oven for about 8-10 minutes or until golden and crispy.
- In a skillet, melt the butter over medium heat and add the chopped onion.
- Sauté the onion until it becomes translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the chicken livers to the skillet.
- Cook the livers for about 5 minutes, stirring occasionally, until they are browned on the outside but still slightly pink on the inside.
- Pour in the white wine and let it simmer until mostly evaporated, about 3-4 minutes.
- Remove the skillet from heat and stir in chopped parsley, salt, and pepper.
- Transfer the liver mixture to a food processor and blend until smooth.
- Spread the chicken liver pâté generously onto the toasted baguette slices and serve immediately.
