Ingredients

  • Baguette - 1 small (about 200g)
  • Chicken livers - 250g
  • Butter - 50g
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • White wine - 50ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for drizzling

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Slice the baguette into 1 cm thick slices and arrange them on a baking sheet.
  3. Drizzle the bread slices with olive oil and toast in the oven for about 8-10 minutes or until golden and crispy.
  4. In a skillet, melt the butter over medium heat and add the chopped onion.
  5. Sauté the onion until it becomes translucent, about 5 minutes.
  6. Add the minced garlic and cook for another minute until fragrant.
  7. Increase the heat to medium-high and add the chicken livers to the skillet.
  8. Cook the livers for about 5 minutes, stirring occasionally, until they are browned on the outside but still slightly pink on the inside.
  9. Pour in the white wine and let it simmer until mostly evaporated, about 3-4 minutes.
  10. Remove the skillet from heat and stir in chopped parsley, salt, and pepper.
  11. Transfer the liver mixture to a food processor and blend until smooth.
  12. Spread the chicken liver pâté generously onto the toasted baguette slices and serve immediately.
