  • Canned white beans (cannellini or navy) - 240g, drained and rinsed
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Fresh rosemary - 1 teaspoon, finely chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - to taste
  • Parmesan cheese - 30g, grated (optional)
  • Fresh parsley - for garnish (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the baguette into 1.5 cm thick slices and arrange them on a baking sheet.
  3. Brush both sides of each slice with 1 tablespoon of olive oil and sprinkle with a pinch of salt.
  4. Toast the bread in the oven for about 10 minutes, flipping halfway through, until golden and crispy.
  5. In a bowl, combine the drained white beans, minced garlic, chopped rosemary, lemon juice, remaining olive oil, salt, and black pepper.
  6. Mash the bean mixture with a fork or use a food processor for a smoother consistency.
  7. Taste and adjust seasoning as desired.
  8. Spread the bean mixture generously over each toasted crostini.
  9. If using, sprinkle grated Parmesan cheese on top.
  10. Garnish with fresh parsley and serve immediately.
