- Fresh rosemary - 1 teaspoon, finely chopped
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - to taste
- Parmesan cheese - 30g, grated (optional)
- Fresh parsley - for garnish (optional)
Steps
- Preheat your oven to 200°C (400°F).
- Slice the baguette into 1.5 cm thick slices and arrange them on a baking sheet.
- Brush both sides of each slice with 1 tablespoon of olive oil and sprinkle with a pinch of salt.
- Toast the bread in the oven for about 10 minutes, flipping halfway through, until golden and crispy.
- In a bowl, combine the drained white beans, minced garlic, chopped rosemary, lemon juice, remaining olive oil, salt, and black pepper.
- Mash the bean mixture with a fork or use a food processor for a smoother consistency.
- Taste and adjust seasoning as desired.
- Spread the bean mixture generously over each toasted crostini.
- If using, sprinkle grated Parmesan cheese on top.
- Garnish with fresh parsley and serve immediately.
