  • Gluten-free all-purpose flour - 150 grams
  • Unsalted butter - 75 grams, softened
  • Powdered sugar - 50 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Salt - a pinch
  • Fruit jam (your choice) - 100 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the gluten-free flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter and powdered sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  7. Once chilled, take 2/3 of the dough and press it into the bottom and up the sides of a small tart pan (about 20 cm diameter).
  8. Spread the fruit jam evenly over the crust.
  9. Roll out the remaining dough to create strips for the lattice top and arrange them over the jam.
  10. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  11. Let it cool for a few minutes before slicing and serving.
