- Unsalted butter - 75 grams, softened
- Powdered sugar - 50 grams
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Baking powder - 1 teaspoon
- Salt - a pinch
- Fruit jam (your choice) - 100 grams
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the gluten-free flour, baking powder, and salt.
- In another bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 15 minutes.
- Once chilled, take 2/3 of the dough and press it into the bottom and up the sides of a small tart pan (about 20 cm diameter).
- Spread the fruit jam evenly over the crust.
- Roll out the remaining dough to create strips for the lattice top and arrange them over the jam.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
- Let it cool for a few minutes before slicing and serving.
