Ingredients
- Polenta - 100 grams
- Water - 500 ml
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almond flour - 20 grams (for coating)
- Fresh basil - for garnish
Steps
- In a pot, bring 500 ml of water to a boil. Add salt to the boiling water.
- Slowly whisk in 100 grams of polenta, stirring continuously to avoid lumps.
- Reduce heat to low and cook for about 10-15 minutes, stirring frequently until the polenta thickens and pulls away from the sides of the pot.
- Remove from heat and stir in 2 tablespoons of olive oil, 30 grams of grated Parmesan cheese, garlic powder, dried oregano, and black pepper until well combined.
- Spread the cooked polenta onto a baking sheet lined with parchment paper and smooth it out to about 1.5 cm thickness. Let it cool completely, about 10 minutes.
- Once cooled, cut the polenta into bite-sized squares or rounds.
- Preheat the oven to 200°C (400°F).
- Coat each polenta piece in almond flour, then place them on a greased baking sheet.
- Drizzle a little olive oil over the top of the bites and bake for 15-20 minutes, or until golden and crispy, flipping halfway through.
- Remove from the oven and let cool slightly. Garnish with fresh basil before serving.
