- 2 boneless, skinless chicken breasts - 400 grams
- 1/2 cup almond flour - 50 grams
- 1/4 cup grated Parmesan cheese - 25 grams
- 1 teaspoon garlic powder - 3 grams
- 1 teaspoon Italian seasoning - 1 gram
- 1/2 teaspoon salt - 3 grams
- 1/4 teaspoon black pepper - 1 gram
- 1 large egg - 50 grams
- 1/2 cup marinara sauce - 120 grams
- 1/2 cup shredded mozzarella cheese - 60 grams
- 2 tablespoons olive oil - 30 milliliters
- Fresh basil leaves - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a shallow bowl, combine almond flour, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
- In another bowl, beat the egg until well mixed.
- Dip each chicken breast first into the beaten egg, allowing excess to drip off, then coat it thoroughly with the almond flour mixture.
- In a large oven-safe skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for 3-4 minutes on each side until golden brown.
- Once browned, pour marinara sauce over each chicken breast and sprinkle with shredded mozzarella cheese.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the cheese is bubbly.
- Remove from the oven and garnish with fresh basil leaves before serving.
