Ingredients

  • 2 boneless, skinless chicken breasts - 400 grams
  • 1/2 cup almond flour - 50 grams
  • 1/4 cup grated Parmesan cheese - 25 grams
  • 1 teaspoon garlic powder - 3 grams
  • 1 teaspoon Italian seasoning - 1 gram
  • 1/2 teaspoon salt - 3 grams
  • 1/4 teaspoon black pepper - 1 gram
  • 1 large egg - 50 grams
  • 1/2 cup marinara sauce - 120 grams
  • 1/2 cup shredded mozzarella cheese - 60 grams
  • 2 tablespoons olive oil - 30 milliliters
  • Fresh basil leaves - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a shallow bowl, combine almond flour, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
  3. In another bowl, beat the egg until well mixed.
  4. Dip each chicken breast first into the beaten egg, allowing excess to drip off, then coat it thoroughly with the almond flour mixture.
  5. In a large oven-safe skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for 3-4 minutes on each side until golden brown.
  6. Once browned, pour marinara sauce over each chicken breast and sprinkle with shredded mozzarella cheese.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the cheese is bubbly.
  8. Remove from the oven and garnish with fresh basil leaves before serving.
