- All-purpose flour - 100 grams
- Eggs - 2 large
- Milk - 250 ml
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh spinach - 200 grams
- Ricotta cheese - 200 grams
- Parmesan cheese - 50 grams, grated
- Nutmeg - 1/4 teaspoon
- Black pepper - to taste
- Butter - for greasing
Steps
- In a mixing bowl, whisk together flour, eggs, milk, and salt until smooth to create the crepe batter. Let it rest for 15 minutes.
- While the batter rests, heat a pan over medium heat and add a little butter. Sauté the fresh spinach until wilted, then remove from heat and let cool.
- In a bowl, combine the ricotta cheese, grated Parmesan, sautéed spinach, nutmeg, and black pepper. Mix well until all ingredients are incorporated.
- In the same pan used for the spinach, pour a ladle of crepe batter and swirl to coat the bottom evenly. Cook for about 2-3 minutes or until the edges lift and the bottom is lightly golden. Flip and cook for another minute. Remove and set aside. Repeat with the remaining batter.
- Preheat the oven to 180°C (350°F).
- Take each crepe and place a generous spoonful of the ricotta and spinach mixture in the center. Roll or fold the crepe and place it seam-side down in a greased baking dish.
- Once all crepes are filled and arranged in the dish, sprinkle any remaining Parmesan cheese on top.
- Bake in the preheated oven for about 15 minutes or until heated through and slightly golden on top. Serve warm.
