Ingredients

  • All-purpose flour - 100 grams
  • Eggs - 2 large
  • Milk - 250 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh spinach - 200 grams
  • Ricotta cheese - 200 grams
  • Parmesan cheese - 50 grams, grated
  • Nutmeg - 1/4 teaspoon
  • Black pepper - to taste
  • Butter - for greasing

Steps

  1. In a mixing bowl, whisk together flour, eggs, milk, and salt until smooth to create the crepe batter. Let it rest for 15 minutes.
  2. While the batter rests, heat a pan over medium heat and add a little butter. Sauté the fresh spinach until wilted, then remove from heat and let cool.
  3. In a bowl, combine the ricotta cheese, grated Parmesan, sautéed spinach, nutmeg, and black pepper. Mix well until all ingredients are incorporated.
  4. In the same pan used for the spinach, pour a ladle of crepe batter and swirl to coat the bottom evenly. Cook for about 2-3 minutes or until the edges lift and the bottom is lightly golden. Flip and cook for another minute. Remove and set aside. Repeat with the remaining batter.
  5. Preheat the oven to 180°C (350°F).
  6. Take each crepe and place a generous spoonful of the ricotta and spinach mixture in the center. Roll or fold the crepe and place it seam-side down in a greased baking dish.
  7. Once all crepes are filled and arranged in the dish, sprinkle any remaining Parmesan cheese on top.
  8. Bake in the preheated oven for about 15 minutes or until heated through and slightly golden on top. Serve warm.
