Ingredients
- Eggs - 4 large
- Almond flour - 100 grams
- Milk (unsweetened almond or coconut) - 200 ml
- Spinach (fresh) - 200 grams
- Ricotta cheese - 150 grams
- Parmesan cheese (grated) - 50 grams
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- In a mixing bowl, whisk together the eggs, almond flour, milk, salt, and pepper until you have a smooth batter.
- Heat a non-stick skillet over medium heat and lightly grease it with olive oil.
- Pour a ladleful of the batter into the skillet, swirling it to create a thin crepe. Cook for 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes. Repeat with the remaining batter, stacking the crepes on a plate.
- In a separate pan, sauté the fresh spinach in a little olive oil until wilted. Remove from heat and let cool slightly.
- In a bowl, combine the wilted spinach, ricotta cheese, grated Parmesan, nutmeg, salt, and pepper. Mix until well combined.
- Take one crepe, place a generous spoonful of the spinach filling in the center, and fold the crepe over the filling. Repeat with remaining crepes and filling.
- Serve the crespelle warm, garnished with additional grated Parmesan if desired.
