Steps
- In a mixing bowl, combine the flour and salt, then whisk in the eggs and gradually add the milk until the batter is smooth. Let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a bit of olive oil. Pour in a ladleful of batter, swirling the skillet to spread it evenly. Cook for about 2 minutes until the edges lift, then flip and cook for another minute. Repeat until all batter is used, stacking the crepes on a plate.
- In another pan, heat a tablespoon of olive oil and sauté the fresh spinach until wilted. Remove from heat and mix in the ricotta, Parmesan, nutmeg, and black pepper until well combined.
