  • Ricotta cheese - 150g
  • Parmesan cheese, grated - 30g
  • Nutmeg - a pinch
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the flour and salt, then whisk in the eggs and gradually add the milk until the batter is smooth. Let it rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a bit of olive oil. Pour in a ladleful of batter, swirling the skillet to spread it evenly. Cook for about 2 minutes until the edges lift, then flip and cook for another minute. Repeat until all batter is used, stacking the crepes on a plate.
  3. In another pan, heat a tablespoon of olive oil and sauté the fresh spinach until wilted. Remove from heat and mix in the ricotta, Parmesan, nutmeg, and black pepper until well combined.
  4. Place a spoonful of the spinach mixture onto each crepe, fold them over, and serve warm, garnished with additional Parmesan if desired.
