  • Honey - 2 tablespoons
  • Fresh spinach - 50 grams
  • Olive oil - 1 tablespoon
  • Black pepper - to taste
  • Parmesan cheese - 20 grams, grated

Steps

  1. In a mixing bowl, whisk together flour, eggs, milk, and salt until smooth to create the crepe batter.
  2. Heat a non-stick skillet over medium heat and lightly grease with a bit of olive oil.
  3. Pour a ladle of batter into the skillet, swirling to coat the bottom evenly. Cook for about 2 minutes, or until the edges start to lift, then flip and cook for another minute. Repeat with the remaining batter.
  4. In a separate bowl, mix ricotta cheese, honey, chopped spinach, black pepper, and half of the grated Parmesan until well combined.
