- Bell pepper - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat 1 tablespoon of olive oil over medium heat and sauté the red onion and garlic until translucent, about 3-4 minutes.
- Add the diced zucchini and bell pepper to the pan, cooking for another 5 minutes until they soften.
- Stir in the cherry tomatoes and cook for an additional 3 minutes until they start to break down.
- Add the diced seitan to the pan, seasoning with salt and pepper, and cook for 5-7 minutes until heated through.
- In a separate pot, bring the vegetable broth to a boil. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
- Fluff the couscous with a fork and add it to the vegetable and seitan mix, along with the fresh basil and remaining olive oil. Mix well to combine.
- Serve warm, garnished with additional basil if desired.
