- Couscous - 150 grams
- Water - 300 ml
- Zucchini - 1 medium, diced
- Bell pepper (red or yellow) - 1 medium, diced
- Red onion - 1 small, diced
- Cherry tomatoes - 150 grams, halved
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Basil - 1 tablespoon, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat a grill or BBQ to medium-high heat.
- In a pot, bring 300 ml of water to a boil and add 1 teaspoon of salt.
- Once boiling, remove from heat, add couscous, cover, and let it sit for about 5 minutes until the water is absorbed.
- In a large bowl, combine diced zucchini, bell pepper, red onion, cherry tomatoes, minced garlic, olive oil, oregano, salt, and black pepper.
- Toss the vegetables to coat them evenly with the oil and seasoning.
- Place the vegetable mixture onto the grill and cook for about 10-15 minutes, turning occasionally until they are tender and have grill marks.
- Fluff the couscous with a fork and mix in the grilled vegetables, chopped basil, and lemon juice.
- Serve warm, garnished with additional fresh basil if desired.
