Ingredients

  • Couscous - 150 grams
  • Water - 300 ml
  • Zucchini - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Red onion - 1 small, diced
  • Cherry tomatoes - 150 grams, halved
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Basil - 1 tablespoon, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat a grill or BBQ to medium-high heat.
  2. In a pot, bring 300 ml of water to a boil and add 1 teaspoon of salt.
  3. Once boiling, remove from heat, add couscous, cover, and let it sit for about 5 minutes until the water is absorbed.
  4. In a large bowl, combine diced zucchini, bell pepper, red onion, cherry tomatoes, minced garlic, olive oil, oregano, salt, and black pepper.
  5. Toss the vegetables to coat them evenly with the oil and seasoning.
  6. Place the vegetable mixture onto the grill and cook for about 10-15 minutes, turning occasionally until they are tender and have grill marks.
  7. Fluff the couscous with a fork and mix in the grilled vegetables, chopped basil, and lemon juice.
  8. Serve warm, garnished with additional fresh basil if desired.
