- Couscous - 150 grams
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 30 grams, chopped
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- In a saucepan, bring the vegetable broth to a boil.
- Add the couscous and a pinch of salt to the boiling broth, stir, cover, and remove from heat. Let it sit for about 5 minutes until the couscous absorbs the liquid.
- While the couscous is resting, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes to the skillet and cook for another 4-5 minutes until they soften and release their juices.
- Fluff the couscous with a fork and add it to the skillet with the tomatoes. Stir in the chopped basil, black pepper, and adjust salt if needed.
- If using, sprinkle the grated Parmesan cheese on top before serving. Serve warm.
