Ingredients

  • Couscous - 150 grams
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a saucepan, bring the vegetable broth to a boil.
  2. Add the couscous and a pinch of salt to the boiling broth, stir, cover, and remove from heat. Let it sit for about 5 minutes until the couscous absorbs the liquid.
  3. While the couscous is resting, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Add the halved cherry tomatoes to the skillet and cook for another 4-5 minutes until they soften and release their juices.
  5. Fluff the couscous with a fork and add it to the skillet with the tomatoes. Stir in the chopped basil, black pepper, and adjust salt if needed.
  6. If using, sprinkle the grated Parmesan cheese on top before serving. Serve warm.
