- Grilled vegetables (bell peppers, zucchini, eggplant) - 300 grams
Steps
- Preheat the grill to medium heat.
- In a small bowl, mix olive oil, chopped rosemary, minced garlic, black pepper, and salt to create a marinade.
- Pierce the cotechino sausage with a fork in several places to prevent bursting during grilling.
- Brush the marinade over the cotechino, ensuring it's well coated.
- Place the cotechino on the grill and cook for about 15-20 minutes, turning occasionally until browned and heated through.
- While the cotechino is grilling, prepare the grilled vegetables by tossing them in olive oil, salt, and pepper.
- Add the vegetables to the grill during the last 10 minutes of cooking, turning until they are tender and charred.
