Ingredients

  • Cotechino sausage - 300 grams

  • Garlic - 2 cloves, minced
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Lemon - 1, cut into wedges
  • Grilled vegetables (bell peppers, zucchini, eggplant) - 300 grams

Steps

  1. Preheat the grill to medium heat.
  2. In a small bowl, mix olive oil, chopped rosemary, minced garlic, black pepper, and salt to create a marinade.
  3. Pierce the cotechino sausage with a fork in several places to prevent bursting during grilling.
  4. Brush the marinade over the cotechino, ensuring it's well coated.
  5. Place the cotechino on the grill and cook for about 15-20 minutes, turning occasionally until browned and heated through.
  6. While the cotechino is grilling, prepare the grilled vegetables by tossing them in olive oil, salt, and pepper.
  7. Add the vegetables to the grill during the last 10 minutes of cooking, turning until they are tender and charred.
  8. Remove the cotechino and vegetables from the grill and let rest for a couple of minutes.
  9. Slice the cotechino and serve it hot with grilled vegetables and lemon wedges on the side.
