Ingredients
- whole wheat flour - 200 grams
- all-purpose flour - 50 grams
- unsalted butter - 50 grams (softened)
- milk - 100 ml (warm)
- honey - 20 grams
- active dry yeast - 5 grams
- salt - 3 grams
- egg - 1 (for egg wash)
- vanilla extract - 1 teaspoon
- dark chocolate chips - 50 grams (optional)
Steps
- In a small bowl, mix warm milk, honey, and yeast. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine whole wheat flour, all-purpose flour, and salt. Make a well in the center and add the yeast mixture, softened butter, and vanilla extract.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Once risen, punch down the dough and roll it into a rectangle, about 0.5 cm thick.
- Cut the rectangle into triangles (approximately 10 cm wide at the base). If using, sprinkle dark chocolate chips on the base of each triangle.
- Starting from the base of the triangle, roll the dough towards the tip to form a croissant shape. Place on a baking tray lined with parchment paper.
- Preheat the oven to 180°C (350°F). Let the shaped cornetti rest for another 20 minutes.
- Brush the tops with beaten egg for a golden finish, then bake for 15-20 minutes until golden brown.
- Remove from oven and let cool slightly before serving.
