Ingredients

  • whole wheat flour - 200 grams
  • all-purpose flour - 50 grams
  • unsalted butter - 50 grams (softened)
  • milk - 100 ml (warm)
  • honey - 20 grams
  • active dry yeast - 5 grams
  • salt - 3 grams
  • egg - 1 (for egg wash)
  • vanilla extract - 1 teaspoon
  • dark chocolate chips - 50 grams (optional)

Steps

  1. In a small bowl, mix warm milk, honey, and yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine whole wheat flour, all-purpose flour, and salt. Make a well in the center and add the yeast mixture, softened butter, and vanilla extract.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Once risen, punch down the dough and roll it into a rectangle, about 0.5 cm thick.
  6. Cut the rectangle into triangles (approximately 10 cm wide at the base). If using, sprinkle dark chocolate chips on the base of each triangle.
  7. Starting from the base of the triangle, roll the dough towards the tip to form a croissant shape. Place on a baking tray lined with parchment paper.
  8. Preheat the oven to 180°C (350°F). Let the shaped cornetti rest for another 20 minutes.
  9. Brush the tops with beaten egg for a golden finish, then bake for 15-20 minutes until golden brown.
  10. Remove from oven and let cool slightly before serving.
