Ingredients

  • All-purpose flour - 250 grams
  • Unsalted butter - 125 grams, cold and cubed
  • Granulated sugar - 30 grams
  • Salt - 5 grams
  • Active dry yeast - 7 grams
  • Milk - 100 ml, warm
  • Egg - 1 large (for egg wash)
  • Jam (your choice, e.g., apricot or strawberry) - 100 grams

Steps

  1. In a bowl, combine the warm milk and active dry yeast, let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour, sugar, and salt.
  3. Add the cold, cubed butter to the flour mixture and mix with your fingers or a pastry cutter until it resembles coarse crumbs.
  4. Pour the yeast mixture into the flour mixture and knead until a smooth dough forms, about 5-7 minutes.
  5. Wrap the dough in cling film and refrigerate for at least 30 minutes.
  6. On a lightly floured surface, roll out the dough into a rectangle about 1 cm thick.
  7. Fold the dough into thirds like a letter, then roll it out again into a rectangle and fold again. Repeat this process for a total of 3 folds.
  8. Wrap the dough again and chill for another 30 minutes.
  9. Preheat the oven to 200°C (400°F).
  10. Roll the chilled dough into a large rectangle and cut it into triangles (about 10 cm wide at the base).
  11. Place a teaspoon of jam at the base of each triangle and roll it up towards the tip, tucking the tip under the croissant.
  12. Arrange the rolled cornetti on a baking tray lined with parchment paper.
  13. Beat the egg and brush it over the top of each cornetto for a golden finish.
  14. Bake in the preheated oven for 15-20 minutes or until golden brown.
  15. Allow to cool slightly before serving.
