- All-purpose flour - 250 grams
- Unsalted butter - 125 grams, cold and cubed
- Granulated sugar - 30 grams
- Salt - 5 grams
- Active dry yeast - 7 grams
- Milk - 100 ml, warm
- Egg - 1 large (for egg wash)
- Jam (your choice, e.g., apricot or strawberry) - 100 grams
Steps
- In a bowl, combine the warm milk and active dry yeast, let it sit for 5 minutes until frothy.
- In a large mixing bowl, whisk together the flour, sugar, and salt.
- Add the cold, cubed butter to the flour mixture and mix with your fingers or a pastry cutter until it resembles coarse crumbs.
- Pour the yeast mixture into the flour mixture and knead until a smooth dough forms, about 5-7 minutes.
- Wrap the dough in cling film and refrigerate for at least 30 minutes.
- On a lightly floured surface, roll out the dough into a rectangle about 1 cm thick.
- Fold the dough into thirds like a letter, then roll it out again into a rectangle and fold again. Repeat this process for a total of 3 folds.
- Wrap the dough again and chill for another 30 minutes.
- Preheat the oven to 200°C (400°F).
- Roll the chilled dough into a large rectangle and cut it into triangles (about 10 cm wide at the base).
- Place a teaspoon of jam at the base of each triangle and roll it up towards the tip, tucking the tip under the croissant.
- Arrange the rolled cornetti on a baking tray lined with parchment paper.
- Beat the egg and brush it over the top of each cornetto for a golden finish.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving.
