  • Vanilla extract - 1 teaspoon
  • Cornstarch - 20 grams
  • Heavy cream - 200 ml
  • Powdered sugar - 30 grams

Steps

  1. In a mixing bowl, combine the flour, sugar, salt, and instant yeast.
  2. Cut the cold butter into small cubes and add to the flour mixture; mix until it resembles coarse crumbs.
  3. In a separate bowl, whisk together the warm milk and egg, then add to the flour mixture; knead until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Meanwhile, prepare the crema by whisking together the egg, cornstarch, sugar, and vanilla extract in a saucepan.
  6. Gradually add the heavy cream while whisking continuously, then cook over medium heat until thickened.
  7. Remove from heat and let the crema cool, then refrigerate until ready to use.
  8. Roll out the chilled dough into a large rectangle, then fold it into thirds like a letter and roll out again; repeat this process 2-3 times to create layers.
  9. Cut the dough into triangles and place a spoonful of crema at the wide end; roll them up into croissant shapes.
  10. Place the rolled cornetti on a baking tray lined with parchment paper and let them rise for 30 minutes.
  11. Preheat the oven to 180°C (350°F) and bake the cornetti for 20-25 minutes until golden brown.
  12. Allow to cool slightly before serving, dusted with powdered sugar.
