- Wild boar meat - 400 grams, cubed
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Red wine - 150 ml
- Canned tomatoes - 200 grams, crushed
- Bay leaves - 2
- Fresh rosemary - 1 sprig
- Salt - to taste
- Black pepper - to taste
- Chicken broth - 200 ml
- Parsley - for garnish, chopped
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the cubed wild boar meat. Brown the meat on all sides, about 8-10 minutes.
- Pour in the red wine and scrape the bottom of the pot to deglaze. Let it simmer for 5 minutes to reduce slightly.
- Add the crushed tomatoes, bay leaves, rosemary, salt, and pepper. Stir well to combine.
- Pour in the chicken broth, bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1 to 1.5 hours, or until the meat is tender.
- Remove the bay leaves and rosemary sprig. Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with chopped parsley.
