Ingredients

  • Wild boar meat - 400 grams, cubed
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Red wine - 150 ml
  • Canned tomatoes - 200 grams, crushed
  • Bay leaves - 2
  • Fresh rosemary - 1 sprig
  • Salt - to taste
  • Black pepper - to taste
  • Chicken broth - 200 ml
  • Parsley - for garnish, chopped

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté until the vegetables are soft, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the cubed wild boar meat. Brown the meat on all sides, about 8-10 minutes.
  4. Pour in the red wine and scrape the bottom of the pot to deglaze. Let it simmer for 5 minutes to reduce slightly.
  5. Add the crushed tomatoes, bay leaves, rosemary, salt, and pepper. Stir well to combine.
  6. Pour in the chicken broth, bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1 to 1.5 hours, or until the meat is tender.
  7. Remove the bay leaves and rosemary sprig. Adjust seasoning with salt and pepper if needed.
  8. Serve hot, garnished with chopped parsley.
